Quick Risotto Recipe

Quick Risotto with Smoked Gouda, Golden Raisins and Cherries

Makes 4 servings

Prep Time:  5 minutes

Cook Time:  30 minutes

Ingredients:

1 tablespoon olive oil

1/4 cup finely diced onion

1 cup Arborio or medium grain rice

1/4 cup dry wine

1-3/4 cup reduced chicken broth soup

1/4 cup Sun-Maid Golden Raisins

1/4 cup Sun-Maid Tart Cherries or Cape Cod Cranberries

1/2 cup (2 ounces) smoked Gouda cheese

1/4 cup (1 ounce) Parmesan cheeses, shredded

Black pepper to taste

Directions:

1.)  Heat olive oil in a medium-size saucepan.

2.)  Saute onion 2-3 minutes until soft.

3.)  Add rice and stir until completely coated with oil.

4.)  Add wine and simmer until liquid is evaporated.

5.)  Add broth and bring to a simmer.

6.  Reduce heat to low, cover and simmer 18-20 minutes until all broth is nearly absorbed.

7.)  Remove pan from heat and stir in dried fruit and cheeses.

8.)  Season pepper to taste.

9.)  Let stand 5 minutes lightly covered.

10.)  Serve hot.

I made this recipe last week. It was delicious and simple to make for those busy days.
